Vallentine's dinner special

makes 6 serviings
2 lbs beef eye round steak - 1/2'' slices, pound into 10'' square-like "tortillas"
----------- finely chopped
1 large onion
a half-dozen garlic cloves
2 anaheim peppers
1 or 2 jalapeno peppers
1/2 cup cilantro
1/2 cup basil
1 red bell pepper
1/2 cup green onions
1 large tomato
1 large carrot
----------- finely chopped, seasoned with salt & pepper
1/2 cup olive oil
1/4 cup red wine
1 tsp salt
spread about 1/2'' of finely chopped vegies over each meat tortilla then roll it up.
pour olive oil and wine into a thick stainless steel pot, put meat rolls inside, spread the remaining vegies over the rolls.
medium heat ( 5-6) until the oil starts boiling; then reduce heat to low (2.5-3) and let it sit for an hour.
serve hot with baked potatos or on white rice. goes well with a salad and a glass of red wine - california merlot or rioja.
